Meatballs Made with Refried Beans and Rolled Oats?

Or would you prefer an instant-potato (see post below about growing your own!)-hot-dog-and-bleu-cheese casserole? Perhaps you’d like TexMex stuffing with macaroni and peaches? Does this sound like a fancy, schmancy gourmet meal, the kind that your kids would never eat? Try again. These are recipes from Chef Plemmons, culinary instructor at Olympic College, who published a cookbook full of recipes using only basic equipment and food usually found in food banks! Best of all, FamilyWorks received a donation of hundreds of these cookbooks, which we were able to give out at no charge to the food bank clients last winter! Check out this Colors NW article for more information.
